Lekker eten verslaat polypil

Een natuurlijker en lekkerder manier om gezond te blijven en langer te leven bestaat er niet: dagelijkse consumptie van een verzameling ingrediënten aangeduid als het polymeal. In BMJ van vorige week wordt het wonderdieet van harte aanbevolen. Grap of serieuze wetenschap? De auteurs van het artikel laten het een beetje in het midden, maar weet wel dat dit onderzoek van Oscar Franco c.s. (Erasmus UMC Rotterdam) en van MC-columnist en epidemioloog Luc Bonneux vorige week verscheen in de altijd vermakelijke kersteditie van het Britse vakblad.


Het polymeal zou de kans op cardio-vasculaire ziekten met maar liefst 76 procent reduceren en een aanzienlijke verlenging van de levensverwachting opleveren. Vooral mannen hebben er baat bij: ze leven gemiddeld 6,6 jaar langer dan mannen die zich bezondigen aan allerlei ander voedsel en het duurt minstens negen jaar langer voordat ze last krijgen van een hartziekte. Maar ook vrouwen zitten goed: ze leven vijf jaar langer en krijgen pas acht jaar later dan seksegenoten die niet ‘evidence-based’ eten, te maken met hartaandoeningen.


De ingrediënten van de dagelijkse maaltijd klinken overigens bekend: wijn, vis (vier keer per week), chocolade (puur), fruit en groenten, amandelen en knoflook. De -wetenschappers baseren hun keuze op de mate waarin deze voedingsmiddelen volgens de wetenschappelijke literatuur een gunstige invloed hebben op hartziekten, bloeddruk en cholesterolgehalten. Ze calculeerden vervolgens de potentiële effecten bij vijftigjarigen.


Uiteraard zien Franco c.s. hun polymeal als een effectief, niet-farmacologisch, veilig en smakelijk alternatief voor de gehypete polypil, waarover ruim een jaar geleden met veel tamtam werd bericht in BMJ. Deze pil zou de kans op hartziekten met maar liefst 80 procent terugbrengen. Maar of die ooit werkelijkheid wordt, is maar zeer de vraag. Dat is bij het polymeal wel anders: de ingrediënten zijn in elke supermarkt te koop en niet duur: nog geen 22 euro per week, zo toont een zeer korte empirische studie in een lokale winkel aan.


De auteurs zien bovendien geen majeure bijwerkingen van hun dieet of het zouden de slechte adem en lichaamsgeur moeten zijn als gevolg van frequente consumptie van knoflook. Maar zodra iedereen overstag is, zal dat in de sociale omgang geen probleem meer zijn, verwachten ze.


Wie de zaak lekker agressief wil aanpakken, staat het vrij polypil en polymeal te combineren. Franco c.s. achten het daarom zinvol na te gaan wat het effect zal zijn van de opwaardering van bloem met een statine, twee bloeddrukverlagers, wat foliumzuur en een aspirine. Dat cardiologen bij succes over-bodig worden, vinden ze geen enkel probleem; die kunnen zich nog altijd laten omscholen tot kok of wijnadviseur.

Recept:

WATERCRESS SOUP

 

Introduction

This simple soup brings out all the qualities of watercress; fresh, tangy and peppery.

Planning ahead

Can be made 1 day in advance but it is always better when it is made just before serving. If you decide to make it ahead of time, cool down the onion, potato and leek base and instead of the boiling water add iced water to the watercress to halt the cooking. This will do three things; keep the vivid green colour, the flavour and the nutrients. Reheat the soup at the last moment for the same reasons as above.

Serves 4

Preparation time: 10 minutes

Cooking time: 15 minutes

20g 1 tbsp Butter, unsalted

100g 1 small Onion, finely chopped

80g 1 medium Leek, outer leaves removed, washed sliced and sliced finely (2mm)

80g 1small Potato, peeled and finely sliced

1.5l Water, boiling (*1)

400g 4 large bunches Watercress (*2), stalks removed

100g 1 large handful Spinach, washed and picked

Sea Salt & freshly ground black pepper

Method Cooking the Soup

1. On a low heat sweat(*3) the onion, leek and potato in half the butter for 2-3 minutes. Add half of the water (boiling), season with sea salt and freshly ground white pepper. Quick boil for 10 minutes.

2. In another saucepan sweat and wilt the watercress and spinach for 2-3 minutes in the remaining butter; add the other half of boiling water and cook for 1 minute – mix both soups together.

3. Purée in a liquidiser until very smooth.

4. Taste and correct the seasoning if required – serve immediately*4, piping hot, to your guests in a large soup tureen.

Variations

As a good Frenchman, I would be tempted to add a clove of pureed garlic or flakes of toasted garlic to the soup. A tablespoon of Greek yoghurt would be a delicious addition

Chef’s notes (*)

*1 The boiling water speeds up the making of the soup and also retains all the elements, colour and flavour of the watercress.

*2 According to the variety, the watercress may vary in strengths of flavour. If very peppery, cut off the entire stalk, if mild, keep some of the stalk.

*3 The sweating of the vegetables is very important as it will soften and sweeten the vegetables improving their flavour and digestibility.

*4 If the soup is cooked in advance, you will loose the colour, the freshness of the taste and also a lot of nutrients.

GRILLED FILLET OF MACKEREL, TAGINE OF WINTER ROOT VEGETABLES WITH CHICKPEAS & TOASTED ALMONDS; ROASTED GARLIC

 

 

Introduction

Mackerel is a most underrated fish, both delicious and nutritionally very valuable; containing a great source of the omega 3 essential fatty acids.

Simply grilled mackerel is well suited to being paired with more robust flavours. This recipe is influenced by the Moroccan spice mix ‘Ras el Hanout’ which can be made with up to a 100 different spices!

Serves 4

Preparation & Cooking Time 1 hour

Ingredients

For the tomato fondue

10g 2 cloves Garlic, crushed

30ml 2 tbsp Olive oil

800g 8 large Plum tomatoes, vine ripened, roughly chopped

Sea salt, freshly ground black pepper & a pinch of sugar (*1)

For the tagine of winter root vegetables with chickpeas

120g 1 medium Carrot, cut in half lengthways & sliced on a slant 1cm thick

100g 1 medium Courgette, cut in half lengthways and cut into 1cm pieces

150g Chickpeas, dried and soaked in cold water overnight (soaked weight 300g)

For the roasted garlic

1 large Bulb of garlic, cloves separated, skin on

15ml 1 tbsp Olive oil

Sea salt & freshly ground black pepper

For the Mackerel

400g 4 Mackerel fillets, bones removed, skin lightly scored (*1)

15ml 1 tbsp Olive oil

10ml squeeze Lemon juice

Sea salt & freshly ground black pepper

Cooking the tagine of winter root vegetables with chickpeas

Pre-heat the oven to 180°C.

In a medium saucepan on a medium heat soften the garlic in the olive oil for 2 minutes with no colour. Add the chopped tomatoes, bring to a simmer, season with salt & black pepper and cook with a bubble just breaking the surface for 30 minutes. Pass through a Mouli-legumes or a sieve, taste and adjust the seasoning if required; reserve.

In a large saucepan, on a medium heat, soften the chopped vegetables with the spices in the olive oil for 6 minutes. Add the soaked chickpeas and the tomato fondue, bring to a simmer, season with salt & freshly ground black pepper, cover with a lid and cook with a bubble just breaking the surface for 1 hour.

Roasting the garlic

In a small ovenproof frying pan add the garlic cloves in their skin, olive oil and seasoning and place in the oven for 15-20 minutes, turning the cloves over halfway through the cooking time; the garlic should be golden brown, soft and melting inside.

Grilling the mackerel

Pre-heat your grill on full power.

Season the mackerel fillets lightly with sea salt and freshly ground black pepper and place skin side up onto a baking tray and position under a hot grill for 4-5 minutes depending on the thickness of the fillets, remove from the grill and squeeze a little fresh lemon juice over the mackerel fillets.

Finishing the dish

Reheat the tagine, add the chopped coriander and lemon juice, spoon generously on to the plates, top with the grilled mackerel fillets and toasted almonds, and serve with the roasted garlic cloves.

Chef’s notes (*)

*1 We score the skin of the mackerel to assist the even cooking of the fillets and so that the fillets do not curl up while they are cooking.

 

CHOCOLATE MOUSSE

 

Introduction

This is undoubtedly the world’s best chocolate mousse I have eaten, no better anywhere else. A bit tricky but it is worth persevering. It is a dessert I recommend for everyday, any party or celebration. Like any cooking, the success will depend on the quality of the ingredients, please use the very best chocolate 60-70% (this means there is 60-70% cocoa content and 30-40% sugar). Ensure also that you buy the very best unsweetened cocoa powder which will give you the very best chocolate experience!

Serves 4

Preparation & Cooking Time 15 minutes

Ingredients

160g Dark chocolate 70% minimum, finely chopped

10 Egg whites, free range or organic

20g Fructose

Method

Place the finely chopped chocolate into a bowl and melt it over a pan of very hot water. Keep the heat very low. If the heat is too high the chocolate will granulate.

Whip the egg whites and sugar to soft peaks. Immediately, whisk in a quarter of the egg whites to the melted chocolate to lighten the base mixture. Then fold in the remaining egg whites with a spatula, ensuring that you do not over mix as this would make the mousse heavy.
